So its Christmas Eve, and one of the things I always used to do at home with my Dad was make mince pies. Its a lovely festive thing to do with the Christmas music playing and a little festive drink.
I like to make simple traditional mince pies, no little twists involved, just great pastry and a good filling of mincemeat.
Pricked with a fork and a milk wash and into the oven for about 12-15 minutes.
I thought I would have a go with some bite size pies this year for those of use who prefer to go easy on the sugar.
Of course the bite size ones spilt out a bit, but with the pastry flower shape top I guess that was inevitable.
When I lived in New York Mince pies were the one thing I craved like mad at Christmas, I would head to a favourite little British shop called 'Myers of Keswick' and pick up some traditional mincemeat and get baking. The smell from the oven would bring a little British scent to my home.
So no mince pies at Christmas is certainly not an option this Christmas or any Christmas time.
Whatever you are baking this Christmas we want to wish you all a wonderful Happy Christmas from 'Mad Fun Creative'
May it be filled with Joy, Love and Peace this festive season.
