The Best Cookie Recipe Ever.

Well its bake time again and I just have to share my very favourite cookie recipe with you. It comes from a much loved little book of mine from the 70's, used by both my Mum and my Grandma and many before them.

Its the Be-Ro cook book and my copy is the 35th edition and dates from the 1970's. Sadly there is no actual published date on the book so if anyone can find that information out for me, leave me a comment and let me know.

Of course Be-Ro is still a popular flour brand and you can still get up to date copies of the book with new recipes. But I love my old copy as it takes me right back to home comforts of basic cake recipes, yorkshire puddings, puff pastry, scones. To be fair the recipes do feature the use of margarine in most of the recipes, not the favoured choice for many bakers these days, butter being the better healthier option, so you can always use butter instead.

So Here is the recipe for you guys to have a go.

75g Margarine or butter ( sorry I went with the marg ! )

75g soft brown sugar.

1 egg.

few drops of vanilla extract or essence.

150g the all important Be-Ro self-raising Flour.

A pinch of salt ( this really adds to the flavour by the way, if you miss it out they are seriously not as tasty)

100g chocolate chopped or chocolate chips ( word of advice chocolate chips tend to be overpriced a bar of simple inexpensive cooking chocolate is just as good.

For a good batch of these cookies that will last slightly longer than 10 minutes I'd say double the recipe.

1. Cream the margarine and sugar.

2. Beat in the egg and essence.

3. Stir in the chocolate

4. Stir in the flour and salt ( will create a very thick cake type mixture as seen above.)

5. Place small spoonfuls on a tray ( make sure they are not too close or you'll have one giant cookie)

6. Bake in the oven at 180 for about 10-15 minutes.

7. allow them to cool on a rack then enjoy.

These cookies are not like anything else I've tasted they have a real cake like texture to them and are delicious.

This was this weeks after school snack, I love surprising my kids with a home bake. The verdict from them was they loved them, and most importantly they said " Your the best Mum Ever" I know right, are you thinking the same as me? If all I have to do is bake cookies to claim this fantastic title then I'm pretty happy with that. Result!

So there you have it two very happy faces out of school enjoying their cookies.
